Vegan meals ideas & recipes | Easy, healthy, cheap and delicious!

I know becoming vegan can seem a bit scary to people especially if they don’t cook, either because they don’t have the time or because they don’t like to! The truth is it is super easy to eat vegan even with limited time, tight budget or no special skills in a kitchen. Today i just wanted to give you an example of a typical weekly menu for me, very healthy, cheap, easy and absolutely delicious!


Toasts: That’s what i have most of the time, simple whole grain toasts with vegan butter and jam.

Smoothies: They are just perfect for Summer and you can find some of my favorites recipes right here on Love & Lemons blog.

Granola bowls: I usually go for these on the weekend and i follow this recipe from Pick Up Limes to make a big batch of granola in advance. Then i serve like in the photo above with some soy yogourt, fruits, coconut chips and chia seeds.

Vegan waffles: Also a major fave for the weekend, my favorite recipe is by Liv’s healthy Life and you can check out the video right here. I often add chocolate chips to mine before heating them and top them with some banana slices, de-li-cious!


Vegan burger + homemade potato wedges : I found both recipes on Liv’s Healthy Life Youtube channel again and the only thing i changes is that i like to coat my patties with some wheat bran before cooking them on the pan and in the oven. It makes them more crispy and i love it! Other than that, same toppings as always for me: lettuce, tomatoes, pickles, mustard and ketchup! Good ol’ classic!

Salads: In the Summer my favorite dishes are definitely salads! I’m not going to give you a specific recipe but here are some of the things i enjoy putting i my salads at the moment: Tomatoes, corn, lettuce, baby spinach, garlic croutons, vegan nuggets (makes a vegan Ceasar salad!), potatoes, carrots, avocado, melon, mushrooms, cucumber, radishes, beetroot…

I also always make my own dressings: mustard-red vinegar-sunflower oil-salt-pepper / shallots-parsley-balsamic vinegar-olive oil-salt-pepper

Vegetable curry: I already shared this recipe here (in French) and what’s great with this recipe is that it’s even better the next day so you can make it in advance and use it for a quick meal on a busy day.

Vegan “meat” balls & spaghetti: I use store bought vegan meat balls because they’re absolutely delicious and my homemade tomato sauce which is the easiest thing in the world: Put some onions and garlic in a pot with olive oil, add tomato pulp, herbs you like such as basil and oregano, salt, pepper and a bit of sugar. Let simmer on low heat for about 20-30 minutes and voilà! I usually make a huge jar to have on hand for a few different recipes during the week.

Vegetable stew: One of my favorite thing to do is to make a big vegetable stew that i can use on various meal during the week: With rice, pasta, mashed potatoes, or as garnish for some fajitas (my favorite option!). I usually put every veggies i like i a pan or a pot, add lots of spices and herbs, tomato sauce, a bit of water, vegetable stock, salt, pepper, and i let simmer for as long as it takes for all the veggies to be cooked.


Fresh fruits: It’s Summer so like i said in this previous post, there’s no better time to start eating more fresh fruits and vegetables! My favorite right now are peaches and apricots because they are way cheaper than berries. I also adore snacking on some melon when i’m home!

Shortbreads: This vegan coconut, chocolate and walnuts recipe from Mango & Salt  (in French) is so delicious that i actually double triple the quantities to store more of them for the week because they go pretty fast!

Nuts & dry fruits: Always good to have a little packet in your bag in case you feel a bit peckish during the day. My faves are almonds, dries apricots, dries grapes and sunflower seeds.

So there you have it friends, now in all honesty, how hard does it look?! Not so much right? Trust me, i was one of those people who thought it was going to be super hard work to eat vegan and even though i loved cooking, it seemed too much for me at first. It’s not. Like everything new, there’s a learning phase and you’ll have to try many different recipes and ingredients and chances are you won’t like some of them. But if you persevere i promise you’ll discover a whole new delicious way of eating and as someones who’s tastebuds and cravings are actually starting to change right now, i can tell you that it’s amazing and it’s quite life changing!

    Aw I like this post! I’m vegan myself, but my last couple of months of uni saw me eating rice and beans everyday and nothing else (because I’m lazy and was saving the pennies). However, now I’m back in normal life, these have definitely given me some inspiration!
