Meal ideas & recipes for a full Vegan week | Comfort food edition!

Because many of you liked it the first time, i decided to share another post full of delicious meal ideas for you to enjoy during an entire Vegan week! And since it’s Autumn aka the cosy season, i decided to make a sort of special edition with my current favorite comfort dishes.  I really hope you’ll enjoy these recipes and if you make any of mine please feel free to leave a link in the comments or tag me on social medias! BREAKFAST

Porridge: This is the ideal breakfast to enjoy during the colder month and right now this recipe from Sadia at Pick Up Limes is my favorite. Simple, filling and delicious!

Muffins: I’m a big fan of muffins for breakfast (and snacks) and again, this recipe for Oatmeal Blueberry Muffins from Pick Up Limes is by far my favorite too. Don’t hesitate for a second, just try it, you’ll thank me!

Pancakes: This time and like the waffles from the previous edition, i’m literally following Liv’s recipe for these super easy Vegan Pancakes to the letter and they are just perfect that way.

LUNCH/DINNER

Roasted vegetables & cereals: This is actually one of my favorite lunch at the moment. In a big baking dish put a few potatoes cut in medium sized dice, a few sliced carrots, salt, pepper, paprika, somes herbs of your choice and a bit of olive oil. Roast in the oven at 180°celsius for about 45 minutes. During that time cook some quinoa and add in a pan some oignons, shallots and mushrooms and sauté them. Add a bit of soy sauce and let cook until it becomes a bit thicker. Mix everything together in the big baking dish once it’s out of the oven, and enjoy!

Homemade soup: It doesn’t get any easier than this honestly. In a large pot of boiling water, put 2 zucchinis, 3 carrots, 3 peeled tomatoes, 1 big oignon, 1 leek and basically every other vegetable you like. How big you cut your veggies doesn’t really matter because everything will be mixed together at the end. Add a cube of vegetable stock, some herbs, salt and pepper to taste and when all the veggies are cooked enough, mix everything until it becomes a soup! Serve with bread of homemade croutons and enjoy!

Pasta with vegetables and soy cream: Cook the pasta of your choice and in a pan cook some oignons, leeks, mushrooms and shallots. Then add some soy cream, salt, pepper and a little bit of nutmeg and mix it all with the cooked pasta. I often add a bit of spinach and mustard mixed with the soy cream, it’s absolutely delicious!

Vegan “Hachis Parmentier”: I think it’s the first Vegan dish i ever cooked and i still enjoy making it quite often because it’s simple and super comforting. Basically you can sauté every vegetable you like in a pot with some tomato sauce, put that in an oven baking dish, top it with mashed potatoes and put in the oven at 180°c for about 20 minutes. It’s my vegan twist to the traditional french hachis parmentier and i personally like to use leeks, mushrooms, red beans, carrots, zucchini and a bit of soy protein (rehydrated).

DESSERT/SNACKS

Apple crumble: In a bowl mix together with a fork until it crumbles: 60g of  almond puree, 20g of sunflower oil, 50g of blond sugar, 100g of flour, 2 tablespoon of water and 1 teaspoon of cinnamon. In a small pot add 4 apples peeled and cut in small dice, some cinnamon, a bit of vegan butter and blond sugar. Let cook for about 5 minutes, then put in a baking dish, topped with the crumble and cook in the oven at 180°c for about 15-20 minutes. Serve warm with a cup of tea and you’ve reach perfection!

Homemade apple sauce: Here you do the same as above, apples in dice, in the pan with vegan butter, sugar and cinnamon, but this time you let it cook slowly until it becomes a tick sauce or “compote”. I also enjoy that a bit warmed up in the morning sometimes.

    Tout est beau chez toi jusque tes petits plats…Quel bonheur ce doit être que d’avoir à portée de main tous ces ingrédients pour pouvoir se faire plaisir et surtout de le partager avec celui que tu aimes..car partager un bol de nourriture est un acte d’amour qui apaise et met de la joie dans le ooeur…
    J’imagine ton lieu de vie très doux,très épuré,clair,lumineux,douillet,pastel,simple..un peu un “style scandinave” non? J’aimerais cela car c’est très apaisant..
    Je te souhaite un beau we…
