    Recipe | Vegan Burrito Bowl

    You know when sometimes you aime at perfection and once every now and then you reach it? My first try at this Vegan Burrito Bowl was one of those moments! It is fresh, flavourful, nourishing, tasty, a bit spicy and most importantly, delicious! No more rambling, here is the recipe (serves about 4)!

    In a big bowl, mix together:

    300gr of caned kidney beans (caned)
    300gr of corn (caned)
    1 pepper cut into very small dice (the colour you prefer but i like red or orange ones for this recipe)
    1 red onion, finely chopped
    2 tablespoons of olive oil
    the juice of 1 lime (or lemon, according to your taste)
    2 teaspoons of cumin
    Salt, pepper and tabasco to taste

    Serve with slice of vegan breaded “chicken”, guacamole (homemade if you can but i find a delicious organic one in my grocery shop when i’m in a rush) and some tortilla chips! Simple, quick and delicious, what more could you ask?! 😉

    Vous savez quand parfois vous visez la perfection et qu’il arrive de rares moment oĂč vous rĂ©ussissez Ă  l’atteindre? Eh bien mon premier essai Ă  ce Burrito Bowl Ă  Ă©tĂ© l’une de ces rares fois! J’ai Ă©tĂ© inspirĂ©e par un plat disponible chez Frichti mais qui contenait malheureusement du poulet… J’ai donc simplement utiliser Ă  la place des escalopes de soja panĂ©es et me suis tout simplement rĂ©galĂ©e! Allez, assez de blabla, voici la recette (pour environ 4 personnes)!

    Dans un grand saladier, mélangez:

    300gr d’haricot rouge (en boite si vous voulez)
    300gr de maĂŻs (en boite)
    1 poivrons coupĂ© en tout petits dĂ©s (choisissez la couleur que vous prĂ©fĂ©rez, pour ma part j’aime surtout les poivrons rouges et oranges pour cette recette)
    1 oignon rouge (finement émincé)
    2 cĂ s d’huile d’olive
    Le jus d’un citron vert (ou jaune, selon votre goĂ»t)
    2 cĂ c de cumin en poudre
    Sel, poivre et tabasco à votre goût

    Servez avec des escalopes ou nuggets de soja panĂ©s (j’adore ceux de chez Herta pour cette recette) coupĂ© en tranches, du guacamole (si pas le temps de le faire maison, privilĂ©giez un tout fait mais bio au supermarchĂ©) et des tortillas! Simple, dĂ©licieux et super rapide Ă  prĂ©parer, que vous faut-il de plus?! 😉
